1 can - Spam (Chamoru Rib Eye Steak)
2 lemons (juiced)
1 medium onion (finely diced)
2 stalks green onion (finely diced) optional
1 coconut (grated)
diced hot peppers to taste
Dice Spam into 1/4 inch cubes. Using a fork, course mash Spam cubes. Add lemon juice, onion(s), grated coconut, and hot peppers. Mix all ingredients and let set for about 30 minutes. If the salt in the Spam is not enough to suite your taste, add more to satisfy your taste buds. Goes great with anything you would eat with "normal" keleguen; also makes a good sandwich! Enjoy!
My nephew, Jayton, who was 15 at the time, introduced this version of keleguen to me when I was still on Active Duty in the Army. Even tried it with MREs....won't ever try that again!
