1.5 lbs. pork with skin
1 cup Water (enough just to boil a little at a time) Not full passing the meat.
1/4 cup Apple cider Vinegar
1 med.Onions sliced
4 clove of garlic cho
Salt to taste
1 pkg. Mamas Sita Achote powder diluted in 1 cup warm water
1 Tsp.Black Pepper
1 1/2 cup Frozen sweet peas
4 tbs. Oil to sauté
Cut up the meat when it is still a little frozen(its easier to handle). Cut it into thin squares and set aside.
Slice up onions, minced garlic and set aside.
Mix your achote powder in a cup of water to dissolve and set aside.
Heat you pot and add in the oil to saute. Add onions and garlic, stir until it is golden brown then pour cut up pork until evenly cook.
Cover and let the juice of the meat come out. Add in 1 cup water to the meat let it boil.Lower heat to number 6 let it cook till water low then add Achoite mix.
Cover and let it boil for about 30 minutes.
Towards the end, the water is almost low again, add in the vinegar little at a time, Salt, Black Pepper. let it boil for 3 minutes. Then stir.
You may keep it open to boil towards the end so it can dry up a little and it will
thicken up. Take a spoon of the liquid and taste it. You may add in a little more of the vinegar or salt if you like, but the sauce should be on the vinegary side.
If sauce is thickening and drying, lower the heat and let it simmer and add in your frozen peas cook for 5 minutes then ready to eat with hot rice.
