2 cups flour
1 teaspoon baking powder
1/3 cup sugar
1/2 teaspoon salt
2 tablespoons softened butter
1 egg, lightly beaten
1/3 cup grapeseed oil
1 teaspoon vanilla extract
1/3 cup coconut milk
(Optional: add 1 teaspoon cinnamon spice)

Sift the dry ingredients into a bowl. Cut-in the softened butter until crumbly.
Create a “well†in the center of the flour mixture and add the egg, oil, and extract. Mix until ingredients are moistened.
Slowly add the coconut milk a little at a time until the dough holds together. You may need less or more than 1/3 cup of coconut milk. Knead dough for two minutes.
Then divide the dough into 12 to 15 dough balls. Cover and let rest for five minutes.
Heat griddle or comal to medium low heat.
Use a tortilla press to flatten each dough ball. Place on heated griddle and cook each side until golden, about 20 seconds each side. Place on a rack to cool.
Enjoy with a cup of coffee.
