CHELAKILIS ( CHICKEN IN ACHIOTE AND COCONUT MILK) WITH GRITS OR GROUND RICE
CHELAKILIS ( CHICKEN IN ACHIOTE AND COCONUT MILK) WITH GRITS OR GROUND RICE: Submitted by: Peter Chargualaf - Executive Chef | Date Added: 1 Jan 2010 Ingredients:

1 Chicken, whole cut up into 12 pieces
2 Cups Grits (prepare grits per package instructions)
2 Cups ground rice (if Grits are not available)
1 Can coconut milks
1/2 cup vegetable oil
2 Tablespoons chicken base
Achiote (Achote) powder (use sparingly for color and flavor ony)
2 Cloves garlic, minced

Cooking Instructions:

1. Brown chicken in 1.5 gal. stock pot.with oil.
2. Add coconut milk, chicken base, achote and garlic to pot.
3. Add prepared grits and let simmer for 8 minutes.
4. Add more grits if you want a thicker gravy.
5. Add salt and pepper to taste.
6. Serve over steamed rice or by itself.
7. Serve with Finadene Sauce as well.
* Chicken never had it so good!
