BBQ Ribs
BBQ Ribs: Submitted by: Scott Diaz | Date Added: 27 Jan 2010 Ingredients:

2 - Racks Pork Baby Back Ribs, About 3 1/2 Lbs Each
4 Cups Soy Sauce
2 Cups Fresh Lemon Juice
1 Cup Banana Ketchup
1/4 Cup Honey
1 - 12 oz Bottle Pale Ale (Or Your Favorite Beer)
1 Tsp Fresh Ground Black Pepper
1 Large Sweet Onion, Sliced
5 Cloves Garlic, Smashed
1/4 Bunch Cilantro, Chopped

Cooking Instructions:

1. Combine soy sauce, lemon juice, banana ketchup, honey, beer, black pepper, onion, garlic and cilantro in a large plastic container with a lid. Using a potato masher, mash the onions a few times to help release their flavor to infuse the marinade.
2. Cut each rib rack into 3 pieces. This will help the marinade penetrate the meat better and help speed up the cooking process.
3. Heat one side of an electric gas grill to medium heat, between 325 and 350 degrees.
4. Place meat on heated grates. Close Lid and cook for about 5 minutes. Turn ribs over and cook an additional 5 minutes. Move ribs over to the other side of the grill grates in in which the heating elements are not on. Close lid and cook for 10 to 15 minutes. Turn ribs over, close lid again, and cook an additional 10 to 15 minutes.
5. The ribs are ready when the meat has shrunk about 1/2" from the bone. Serve hot with Finadeni and Red Rice.
**Note, be sure to watch ribs as they can burn easily from the sweet marinade. Adjust heat as needed and be sure to rotate each rib from hotter spots to cooler spots on the grill.**
