***Bibingka*** An easy version of the sweet rice cake from the Philippines.
2 cups Bisquick®
1 cup sugar
1 1/2 cups milk
4 eggs
2 teaspoons vanilla extract
8 oz (1 pkg.) Philadelphia Cream Cheese®
Topping:
1/2 cup sweetened flaked coconut
1/2 cup packed brown sugar
1/4 cup softened butter
1. Pre-heat oven to 350ºF. Spray a 9x13 inch baking pan with non-stick cooking spray.
2. Combine the Bisquick®, sugar, milk and eggs in large mixer bowl. Beat on low speed until well blended.
3. Pour batter into prepared baking pan.
4. Slice cream cheese into 1/4 inch thick strips and arrange strips on top of batter. Push down the pieces of cheese until lightly covered.
5. Bake for 40 to 45 minutes until golden-brown or firm.
6. Mix topping ingredients until well combined then sprinkle over cake.
7. Set oven to Broil. Place cake in center oven for 1 minute until topping is lightly browned.
